Hearty Blueberry Oat Pancakes - Vegan & Gluten Free!
1.5 cups oats - grind
1 scoop vanilla plant protein
1 tsp baking powder
2 chia eggs (2 tbsp of chia seeds w/ 6 tbsp of water)
1.5 cups water
2 heaping tbsp wild blueberries
1 tsp cinnamon
Coconut oil or cooking oil
Grind the oats dry in a blender to create oat flour. Make the chia eggs in a small bowl and let sit for 5 minutes until the texture becomes gel-like. Pour oat flour into a mixing bowl and add in all dry ingredients - protein powder, baking powder, cinnamon, and mix. Once the chia eggs are ready, add those to the bowl with the water and mix. The batter should be pretty thick. But add more water if needed. Then, add the blueberries and gently fold into the batter. Put 1-2 tbsp oil on a pan at medium heat and cook the pancakes for a few minutes on each side until golden brown. Top with syrups and toppings of choice. Enjoy!
