Healthy Vegan Pancakes w/ Peanut Butter Maple Drizzle




Easy 5 ingredient pancakes and 3 ingredient sauce! Vegan, gluten free, and soy free!


Pancakes: 1/2 cup of rolled oats (use gluten free oats for gluten sensitivity) 2 spotty & overly ripe bananas 1 tsp of baking powder Water Coconut oil

Peanut butter maple drizzle: Peanut butter Maple syrup Water


Pancakes:

Finely grind up 1/2 cup of rolled oats in a blender until they reach a flour-like consistency.

Pour into a large mixing bowl and add 1 teaspoon of baking powder.

Mash up the bananas and add to the bowl.

Add small amounts of water until you reach a consistency that’s a little thicker than regular pancake mix.

Place 1/2 tbsp of oil in pan and melt. Pour batter in pan and shape into a flat circle. Let cook until golden brown, then flip and cook other side.

Done & ready to serve! Makes 3-6 pancakes depending on size.

Drizzle: Take 1 tbsp of nut butter and 2-3 tbsp of water. Mix with a spoon - it takes a few minutes - until the nut butter becomes thinner and more fluid. Once the peanut butter has a watery consistency, add 1/2 a tbsp of maple syrup and mix together! .

Top with coconut oil, cinnamon, peanut butter drizzle, (or skip the drizzle and use coconut nectar or maple syrup), & fruits of choice.
