Garbanzo Bean Pasta w/ Homemade Basil Cashew Cream Sauce

A delicious vegan, gluten free, & soy free recipe!

Preheat the oven to 400 degrees F. Then, boil the pasta - I used the brand Banza - it’s made pasta made from garbanzo beans!

Blend 3/4 cup of cashews, 1/4 cup of almonds, 1/4 cup of fresh basil leaves, 1-2 cloves of garlic, 1/4 cup of nutritional yeast, a few sprinkles of turmeric, with a pinch of Himalayan salt, with water until you reach your desired consistency in a blender or ninja for the sauce. Once pasta is cooked, strain and place in a oiled baking dish with the sauce and mix together until each noodle is coated. Place in oven for 5-10 minutes until warm. Be careful not to leave it in too long - the sauce will harden quickly!

Top with avocado & more nutritional yeast if desired!
