This is my latest go-to meal: brown rice, spinach, & black beans. This meal is a great go-to because it's super quick and easy to make and it provides you with all 3 macronutrients- carbs, healthy fats, & protein and is packed with vitamins and minerals!
The spinach is a couple of cups sautéed with water and a splash of avocado oil. Optional - add some fresh squeezed lime juice.
The black beans are seasoned with fresh squeezed lime juice, cumin, Himalayan salt, and garlic powder.
The brown rice is from the easy microwave packets that you can buy from health food stores - this one was 1/2 of the Trader Joe's 3 minute packet.
